Recipe – Swanson® Steakhouse Beef & Pepper Stir-Fry

Today we tried something new for us, Stir-fry. This was a little more expensive than most of our meals due to the fact that we used top-round for the steak. This was a good meal , one even Angel said she liked (even though she did not eat all her beef).

One change that we make here was replacing the rice with potatoes.  I am sure this is excellent with the rice, but we forgot to pick some up when we were at the store.  A definite 4 star meal, cook your family up some of this. It is worth the effort.

Recipe: Swanson® Steakhouse Beef & Pepper Stir-Fry

Ingredients

  • 2 cups Swanson® Beef Stock
  • 3 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1 pound boneless beef sirloin steak, 3/4-inch thick, cut into thin strips
  • 2 cup fresh or frozen green or red pepper strips
  • 4 cups hot cooked regular long-grain white rice


Instructions

  1. Stir the stock, cornstarch, soy and garlic powder in a small bowl until smooth.
  2. Stir-fry the beef in a 10-inch nonstick skillet over medium-high heat until it’s well browned. Add the peppers to the skillet and stir-fry until tender-crisp.
  3. Reduce the heat to medium. Add the stock mixture to the skillet. Cook and stir until the mixture boils and thickens, stirring constantly. Serve over the rice.

Chicken Crunch – Recipe/review

Today Teresa tried cooking something new, Chicken Crunck. This was a great recipe, even the girls liked it. The seasoned breading and crunch made this what it great. This is a nice quick recipe for any fast paced family. If you have teens you may want to double the ingredients to feet them.

Recipe: Chicken Crunch

Summary: Extra-crunchy, oven-fried chicken

Ingredients

  • 1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
    1/2 cup milk
    4 skinless, boneless chicken breast half (about 1 pound)
    2 tablespoons all-purpose flour
    1 1/2 cup Pepperidge Farm® Herb Seasoned Stuffing, finely crushed
    2 tablespoon butter, melted

Instructions


  1. Heat the oven to 400°F. Stir 1/3 cup soup and 1/4 cup milk in a shallow dish. Coat the chicken with the flour. Dip the chicken in the soup mixture. Coat the chicken with the stuffing. Place the chicken onto a baking sheet. Drizzle with the butter.

    Bake for 20 minutes or until the chicken is cooked through.

    Heat the remaining soup and milk in a 1-quart saucepan over medium-high heat until the mixture is hot and bubbling. Serve the sauce with the chicken.
